Classic Meatloaf
1 pound ground beef
1/2 pound ground pork sausage
1/2 cup yellow onion, finely chopped
1/2 cup red or green bell pepper, finely chopped
2 tablespoons fresh parsley, chopped
2 garlic cloves, minced
3/4 cup dried bread crumbs
1 large egg, lightly beaten
1/4 cup whole milk
3 tablespoons ketchup
1 teaspoon yellow mustard
1 teaspoon Worcestershire sauce
2 or 3 drops Tabasco sauce
1/2 teaspoon salt
1/4 teaspoon ground pepper
Directions
Preheat oven to 350 degrees.
Prepare a 9x5-inch loaf pan with cooking spray.
In a large bowl, combine the all of the ingredients and mix thoroughly with a large spoon, or your hands.
Place the meatloaf mixture into the pan and gently press down. Bake for 1 hour, or until loaf is firm and lightly browned. Let stand for 5 – 10 minutes before serving.
Buttermilk Mashed Potatoes
2 pounds baking potatoes, peeled and quartered
1 1/2 teaspoons salt
1 to 1 1/4 cups buttermilk
1/4 teaspoon ground black pepper
2 tablespoons parsley, chopped
Directions
In a large saucepan, add the potatoes and add in enough cold water to cover potatoes by 1-inch. Add in 1 teaspoon of salt. Bring to a boil; reduce heat. Cover pan and cook potatoes for 15 to 20 minutes, or until tender. Drain potatoes in a colander.
Place the hot potatoes in a large bowl and use a potato masher to mash potatoes until smooth. Gradually add in 1 cup of buttermilk; continue beating with an electric mixer on medium speed until nice and fluffy. Add more buttermilk as needed.
Stir in the remaining salt, pepper and parsley.
